Course Overview
Who Should Take the Course
This course is intended to assist candidates in preparing for the CP-FS credential examination that is administered by the NEHA.
Course Objectives
Upon completion of the course, participants will be able to describe and explain:
- Causes and prevention of foodborne illness
- HACCP plans and active managerial control
- Cleaning and sanitizing
- Conducting facility plan reviews
- Pest control
- Risk-based inspections
- Sampling food for laboratory analysis
- Food defense
- Responding to food emergencies and foodborne illness outbreaks
Evaluation Process
There is a practice exam at the end of the course that consists of 34 questions with multiple-choice answers. The purpose of this exam is to assist participants in confirming that they have understood the material covered in the course and in preparing for the written exam. The successful completion of this practice exam does not guarantee a specific score on the credential exam, and it is not required that the practice exam be completed.
Course Duration
The self-paced modules that make up this online course total twelve in total. The participants are free to leave the course at any time and can pick up where they left off when they return. It is dependent on the individual's learning style as well as their prior knowledge of the subject matter how long the course will take in total. Throughout the duration of the course, you will have the opportunity to test your own comprehension with knowledge check questions and hear directly from other individuals who already possess the CP-FS credential.
